Amuse Bouche - duck prosciutto, candied pineapple, brioche toast
1st Course – veloute de canard, toasted macadamia
2nd Course - duck confit, enoki chips, wilted arugula, Jersey blue, raspberry vin
3rd Course - seared duck breast, farro risotto, cherry jus
Dessert - chai spiced foie gras torchon, cinnamon tuile, berry coulis

Featuring Pork from Taylor Farm - Londonderry, VT
Amuse - bacon cotton candy, grilled black mission fig, mascarpone foam
1st Course - summer squash bisque, gouda crème fraiche, crispy pig skin
2nd Course - candied pork belly, tomato jam, frisee, poached quail egg
3rd Course – bone-in chop, “pork & beans”, rhubarb demi
Dessert- maple bacon truffle, bacon panna cotta, peanut butter-bacon crisp
John Wright-Owner/Operator of Taylor Farm & Jacob Ebel-Executive Chef of Stratton Resort will be hosting the event, and discussing their products with attendees.
